About the Recipe
Ingredients
4 medium squash sliced about 1/4 inch thick
1 small onion sliced thin
1 clove garlic chopped
2-3 Tbs butter
1/2 cup fresh sage leaves
1/2 block cream cheese
1 cup sharp cheddar cheese
6 eggs
salt and pepper to taste
1 pie crust
Preparation
Melt butter in pan, add sage leaves and brown. Remove sage leaves and place on paper towels to dry. Add onions, squash, garlic and saute' about 5 min. Should still be firm. Layer squash onion mix in bottom of pie crust. Melt cream cheese in microwave and let cool several minutes. Add eggs to cream cheese and beat together with fork. Add 1/2 cheese to egg mixture. Add salt and pepper to egg mixture. Pour over squash and top with remaining cheese. Bake at 35o degrees until set in middle. Crumble sage on top of pie and allow to cook another minute or two and then let the pie cool for about 10 minutes before serving.
