About the Recipe
This is easy to make ahead and leave in the fridge until you are ready to bake. It is great for breakfast, lunch, or dinner.
Ingredients
3 cups cooked grits ( I like Bumpy Road Grits made from 100% heirloom blue corn)
2 cups chopped kale
1 4.5 oz can chopped green chilis
1/2 cup chopped cherry tomatoes
8 0z ricotta cheese
2 eggs whipped
1 tsp salt
1/2 tsp pepper
Sharp white cheddar cheese for topping
Preparation
Cook grits and then mix all ingredients together and top with cheese. Bake 350 degrees for 30-45 minutes.
